So is that merely a sign of spring for you, or do you tap birches as we do maples here in North America and use the sap for something?
Hi,I tap the birch and drink the sap, it tastes very mildly sweetish and is full of vit c. I also freeze it into ice cubes for whiskey. The sap can be boiled down to increase the conc and thus sweetness too.
