Pignut hunter
Buried beneath the ground is a delicious treat known as the pignut. A small edible golden brown tuber.
The tuber supplies the energy and resource required to produce the new plant and flower in the spring.
I recently uploaded a short video on finding and harvesting this wonderful springtime wild food.

Roasted rainbow Trout
My favourite way to cook fish. The trout is open up and skeleton is removed. Head and tail come with it.
The double fillet is the propped open with skewers and placed over hot hardwood coals to roast. When the skin side (away from coals) is dry and papery feeling the check to see if it's cooked. Delicious. The smoke adds another demension to the flavour.
