A spring treat- Rosebay Willow Herb pith!

Pick some split it open and scrape the pith out with your thumb nail. Tastes a bit like cucumber and is quite sugary.

  1. Well spotted. Many people would only recognise rosebay willow-herb in it's full height flowering glory.

    In the spring when the shoots are tender you can also consume the leaves and shoots either raw, or better, steamed.
